Fabulous French Bread

2 1/2 cup warm water
2 Tbsp. sugar
2 Tbsp. yeast
1 Tbsp. salt
2 Tbsp oil
6 cups flour
Stir water, sugar and yeast. Let set until dissolved. Add salt, oil and 3 cups of flour. Stir-Add rest of flour. Leave wooden spoon in batter. Cover for 10 minutes. Stir down, let rest for 10 minutes. Do this about 4 or 5 times. Turn out on floured counter. Knead 4 or 5 times. Divide into 2 parts. Roll into rectangle and then up like a jelly roll. Put on greased cookie sheet. Let rise for 30 minutes. Bake at 375-400 degrees until brown. May slash top if desired.
