Lasognioli
from: mom

1 lb. ground beef-garlic, salt and pepper
1 can 15 oz diced tomatoes (2 )
1 can/bottle (26 oz) spaghetti sauce
1 pkg. (25 oz) frozen cheese ravioli
1 1/2 cup shredded mozzarella cheese

Brown beef-drain. Stir in tomatoes and sauce.
Arrange 1/2 the ravioli on bottom of 2-8x8 pans (or one 9x13)
Cover with meat sauce. Repeat with remaining ravioli and sauce.
Sprinkle with cheese. Cover pan with foil.

To cook now:
400 degrees Bake 15-20 minutes covered. Remove foil and bake 15-20 minutes longer until hot and bubbly.
To enjoy later:
Seal zip lock with directions. Freeze.
Bake at 400 degrees for approximately 1-1 1/2 hours until hot and bubbly throughout.
Yummy Strawberry Pie

Crust
1 1/4 cup graham cracker crumbs (1 pkg sleeve)
1/4 cup sugar
6 Tbsp. melted butter
Put in 9 inch pie plate. Bake at 375 degrees for 5-8 minutes. Cool.

Creamy Filling
6 oz. cream cheese softened
1/2 cup powdered sugar
1 tsp. vanilla
1 cup heavy cream (already whipped)--Fold it in

Strawberries
4 cups whole strawberries

Glaze
Store bought is okay. It's found in the produce section-it's red in a tub.

Directions:
Crust, creamy filling, strawberries-stem down, spoon glaze over the top.
15 Minute Pizza Dough

2 1/2 cups flour
1 Tbsp. sugar
1 tsp. salt
1 cup hot water (120-130 degrees)
1 Tbsp. Rapid Rise Yeast
2 Tbsp. olive oil

Mix dry ingredients together. Add hot water and oil. Mix 5 minutes in kitchen Aid with dough hook. Let rest 10 minutes. Press dough on pizza pan, stone or jelly roll. Bake for 3 minutes. Take out of oven and add toppings. Return to oven. Bake 8-10 minutes more.
Makes 16-18 inch pizza.

Put pretzels on cookie sheet and place a rolo on each one. Cook at 220 degrees for 3 minutes and then place pecans on top of that. Cool.
Aroz Doce
(Portuguese Rice Pudding)

1 cup short grain white rice
5 cups water
1 slice lemon peel
1 Tbsp. butter
A pinch of salt
2 cups hot milk (preferably whole)
2 tsp. real vanilla
2 cups sugar
5 eggs yolks
Cinnamon as garnish

In a medium saucepan, bring water to a boil with the lemon peel, butter and pinch of salt. Add the rice and let it simmer for about 20 minutes. Stir occasionally. When most of the water has evaporated, add the very hot milk. Simmer for 5 minutes and add the sugar and vanilla.
In a separate bowl, beat together the egg yolks and add a few spoonfuls of the rice mixture to temperate the egg yolks. Then add the now warm egg mixture to the saucepan and stir quickly until even.
Serve in a large dish or small shallow ramekins, and sprinkle with ground cinnamon to garnish.
Nana's Perfect Bread

5 cups Hot Water (110 degrees)
6-10 Cups Hard White Wheat Flour (freshly ground)
2/3 cup Gluten
2/3 cup Oil
2/3 Cup Honey
1/4-1/2 tsp. Vitamin C Crystals
3 Tbsp. Instant (Saf) Yeast
1-2 Tbsp. Salt

Put water into mixing bowl.
Add approximately 3 cups flour, gluten, oil, and honey. Mix thoroughly.
Add Vitamin C and salt, mix briefly.
Add yeast, mix briefly.

Set timer for 6 minutes and turn on bread mixer. Blend while adding additional flour, about 6 more cups, until it pulls away from the sides of the bowl. Turn mixer to high speed and continue mixing for the remaining minutes.

Turn dough onto oiled counter as it will be somewhat sticky. Grease hands to work with dough. Quickly and gently shape into loaves and place into 1 lb. loaf pans sprayed with cooking oil (Pam). Set in a warm spot, lightly cover with damp lightweight dishtowel. Let rise for 45 minutes to 1 hour.
Bake at 350 degrees for 35-40 minutes. Turn out of pans to cool.
Yield: 4 loaves

Curry

1 1/3 lbs. lean beef (or chicken, lamb, shrimp)
17 oz. onions
2 Tbsp. cooking oil
2 1/2 cups water
3.5 oz S&B Golden Curry Sauce Mix

Directions
1.Cut lean beef into cubes and chop onions finely.
2. Stir-fry meat and onions oil or butter in a large skillet until onions are lightly browned, approx. 3 minutes. If you wish, add carrots, celery, bell pepper, potatoes, or other vegetables.
3. Add WATER and bring to a boil. Reduce heat, cover and simmer unitl meat is tender, approx. 10 minutes.
4.Remove from heat, break S&B Golden Curry Sauce Mix into pieces and add them to the skillet, stir until completely melted. Simmer 5 minutes stirring constantly.
5. Serve hot over rice or noodles.

Chocolate (Decorating) Frosting

2 tsp. vanilla extract (or other flavors; you could use almond extract, mint extract, etc.)
8 T. milk or water
2 c. shortening
2 T. Wilton Meringue Powder (optional)
2 lb. (approximately 8 c.) powdered sugar
1 T. cocoa powder
1 oz. melted bakers chocolate

Cream shortening, flavorings and milk or water. Gradually add dry ingredients and mix on medium speed until all ingredients have been thoroughly mixed together. Blend an additional minute or so, until creamy.
Quick Bread Sticks

Pour 2 cups warm water into your mixer bowl
Add in ½ cup sugar
Stir in 1 Tablespoon yeast
Next Add: ½ cup instant dry milk
1 tsp. salt
1 egg
¼ cup oil
Next: add 2 cups of flour and mix until smooth.
Add in 2 more cups flour and knead at a high speed for 3-4 minutes.

Pour into a greased cookie sheet and let the dough rest for a few minutes. With buttered hands push dough from the center to evenly fill the pan.

Melt: 1 cube butter and stir in ½-1 tsp. garlic powder with parsley and brush evenly over dough (reserving a small amount to brush on after baking).

Raise dough for 1 hour---in a warm place.
Before baking---score dough with a pizza cutter (once down the middle length wise and about every 1 1/2 inches sideways) this allows the butter to bake in around the bread sticks.
Bake at 425 for 10 to 12 minutes
Remove from oven---brush with remaining butter mixture and sprinkle with Parmesan cheese.
Note: You can also sprinkle with cinnamon and sugar and drizzle a glaze over top!

Glaze:
2 cups powdered sugar
1 tsp. Vanilla
1-tablespoon butter
Using a whip---add in a few tablespoons hot water to create the right consistency and drizzle over hot bread sticks.

Tater Tot Casserole

2 lbs. beef
1 onion
salt/pepper
1 large bag frozen tater tots
2 cans cream of mushroom soup
1 large bag of frozen mixed veggies

Spread (cooked) beef and onion in 9x13 pan. Top with soup and veggies. Top with tater tots. Bake at 350 for 30 minutes.

Quick Tuna Dish

1 can refrigerated biscuits
1 can tuna
1 can cream of mushroom soup
1 cup cheese-grated

Grease 8 inch square pan. Line with biscuits. Mix tuna and soup. Pour over and top with cheese. Bake at 350 for 30 minutes.

Diane's Lasagna

Ragu
1 can tomato paste
1 cup water
*mix and simmer*

2 cups cottage cheese
1 egg-mix.

Layer with noodles, sauce and cheese.
Bake at 350 until bubbly.
Crockpot Meatloaf

1 egg
1/4 cup milk
**beat together**

2 slices bread, cubed
1/4 cup onions
2 Tbsp. chopped green peppers
1 tsp. salt
1/4 tsp. pepper
**Stir in**

Add and mix well:
1 1/2 lbs. ground beef
*Shape into loaf (smaller than cooker). Put inside.

1/4 cup ketchup
*spread on top of meatloaf*

Put these around meatloaf:
8 small red potatoes
4-6 medium carrots, cut into 1-inch chunks.
Cover.
Cook on high for 1 hour. Reduce heat to low.
Cook 7-8 hours longer.
Fantastic Salsa

8 Tomatoes
2 jalapeno peppers (seeded). Only leave 2 seeds in it.
1 tomatillo
4-6 green onions
1 Tbsp. cider vinegar
1/2 tsp. salt
1/2 tsp. pepper
1 piece of mashed garlic, or chop it up in the blender.
1 handful of washed and dried cilantro leaves.

When you wash your jalapenos be careful as they will burn your hands. Don't rub your eyes for a day. You might want to wear gloves.

In the blender chop up jalapenos, tomatillo, onions and garlic. Add tomatoes, vinegar, salt and pepper, cilantro. Serve with chips and guacamole.
Basic Roll Dough

In your mixing bowl soften 4 Tbsp. Yeast in a cup of warm water.
In a large saucepan scald 4 cups of 2% milk-and remove from heat.
Add 1 to 2 cups butter crisco and as it melts, add:

1 1/2 cups sugar
4 tsp. salt
4 eggs
1 cup cold water

Whip mixture to break egg yolks and slightly combine.

Check to make sure it is only slightly warm before you add it to yeast mixture. Use spatula to scrape ingredients cleanly from the pan and into your mixing bowl. Mix slowly as you add flour, a cup at a time, to make a "HEAVY BATTER" consistency dough. Whip briskly 2-3 minutes until the dough begins to look elastic. Turn out into a large greased bowl and raise to double.
Sprinkle flour over the top.


On a floured surface, divide dough in half or thirds and begin to incorporate more flour by hand to make a soft, stick free dough. Shape or roll out into desired rolls, place on greased sheets and raise again until double. Bake at 375.


Each oven is different, but approximate baking times are:
Cinnamon rolls: 9-10 minutes (cool and frost with your favorite icing or glaze)
Rolls: 8-9 minutes
Bread: (small loaf) 20-25 minutes
Note*To cool breads properly you must use cooling racks so rolls won't be sticky on bottom.



FOR CINNAMON ROLLS:
Roll dough out on floured surface. Melt butter and pour on top of dough.
Sprinkle with sugar.
Sprinkle with cinnamon.
*If you use raisins, put in dough first.
Cut in strips and then roll up. Use sewing floss to cut dough and place on greased pan.
*When putting cinnamon rolls on pan-push down sides.
*You can form them and then put in baggies to freeze for later. Just let them rise (approx. 2 hours) before you put them in the oven.

FOR ROLLS:
Roll dough out on flowered surface. Cut like checker board.
Stack on top of each other.
Dip in butter.

FOR CRESCENT ROLLS:
Roll dough in a circle shape. Then cut them (like you would a pizza). Roll big end first and put on greased cookie sheet.
Better Than "Anything" Cake

1 chocolate cake mix
1 cup semi sweet chocolate chips-divided
1 jar of caramel icecream topping
1 jar of hot fudge icecream topping
1 carton cool whip-thawed
1/2 cup score bar or toffee bits

Make your cake according to the package directions. Put 3/4 cup of chocolate chips into the batter. Put it in a greased cookie sheet. Bake according to the package. When it's cooled-cut in one-inch cubes and then put in trifle bowl. Add 1/3 of caramel, 1/3 fudge, 1/3 cool whip, 1/3 of score bar on top of cake. On top of that-you can sprinkle more chocolate chips and toffee bits. Store left-overs in fridge.

Snicker Doodles

1/2 cup butter softened
1/2 cup shortening
1 1/2 cups sugar
**Mix**
2 eggs
2 3/4 cups flour
2 tsp. cream of tarter
1 tsp. baking soda
1/4 tsp. salt

Roll into balls and roll in cinnamon/sugar mixture.
Put on ungreased cookie sheet.
Bake 8-10 minutes at 400 degrees.

Chex Mix

1 box Rice Chex
1 pkg. coconut
2 kinds of nuts (pecans and slivered almonds)

Put in a big bowl (or Ziploc bag) and mix.

1 cube butter

1 1/2 cup Karo syrup

*Boil for three minutes. Pour over mix.*

{We ate this a lot during our childhood}.
Parent Teacher Conference Cookies

1 lb. butter
2 cups sugar
2 cups brown sugar
4 eggs
1 tsp. salt
2 tsp. baking soda
2 tsp. baking powder
4 1/4 to 4 1/2 cups flour
4-5 cups oatmeal
3 cups chopped nuts
2 cups chocolate chips
OR
1 cup craisins
1 cup white chocolate chips

Combine all ingredients in large bowl and mix well. Bake at 350 for 6-10 minutes on an un-greased cookie sheet.
Red Punch

Dissolve a 3 oz. package cherry jello in 1 cup boiling water.
Stir in:
3 cups cold water
1 quart cranberry juice
6 oz. can frozen lemonade
2 (12 oz) cans 7 up.

Serves: 16 (6 oz) cups
Cheese Ball

1 pkg. 8 oz. cream cheese
1 cup grated cheddar cheese
1 1/2 cup chopped ham
1/2 tsp. minced onion
1/4 tsp. Worcester sauce

Mix together with hands. Roll in nuts and save 1/2 ham.
Mom use to make these for Christmas parties.
Pumpkin Pancakes

Heat a buttered skillet over medium heat; pour in a 1/4 cup batter for each pancake. Cook about 3 minutes per side. Serve with butter and syrup.

Lemon Water

Chicken Noodle Soup

1 pkg. frozen chicken
1 1/2 tsp. sage
1-3.75 oz chicken bouillon (granules)
2 cups carrots
2/3 tsp. pepper
2 cups celery
parsley-sprinkled over top
16 oz. kluski noodles
1 onion chopped
8 heaping tsp. cornstarch

Fill 8 qt. pot 3/4 full of water and chicken and cook until done. Take chicken out (conserve water) and dice. Add veggies, seasonings, diced chicken, and noodles. Simmer 18 minutes. Mix cornstarch with 1 cup water and blend into soup. Cook until thick.
Stuffed Crust Pizza

2-2 1/2 cups all-purpose flour
1 pkg. (1/4 oz) quick-rise yeast
1 tsp. salt
1 cup water
2 Tbsp. vegetable oil
8 pieces string cheese
1/2 pound bulk Italian sausage
1 medium green pepper, diced
1 cup tomato sauce
1 tsp. dried oregano
1/4 tsp. pepper
1/8 tsp. garlic powder
1 jar sliced mushrooms
1 1/2 cups (6oz) shredded part-skim mozzarella cheese

Directions: In a large bowl, combine 2 cups flour, yeast, and salt. In a saucepan, heat water and oil to 120-130 degrees (just use hot water from sink). Add to dry ingredients; beat just until moistened. Stir in enough remaining flour to form a soft dough. Let rest for 5 minutes.

Roll out into a 14 inch circle. Transfer to a greased 12 inch pizza pan, letting dough drape 2 inches over the edge. Place string cheese around the edge of pan; fold dough over cheese and pinch to seal. Prick dough thoroughly with a fork. Bake at 425 for 10 minutes.

Cook sausage and prepare toppings. In a small bowl mix tomato sauce and seasonings, spread over crust. Spread toppings over and bake 15-20 minutes or until cheese is melted and crust is golden brown.

Makes 6-8 slices.

Peanut Butter Play Dough

Directions: Mix all ingredients together until well blended.

Love Potion

Directions:

Favorite Icing

INGREDIENTS
1/2 cup shortening
1/2 cup(1 stick) butter
1 8oz.bar cream cheese @ room temp.
1 tblsp. clear vanilla extact
2 lbs. sifted powdered sugar
1/2 tsp. salt

DIRECTIONS
Cream together shortening,butter and cream cheese until smooth.Add vanilla into mixture and combine.Sift together sugar and salt,and slowly add to the shortening,butter and cream cheese mixture.Make sure all sugar is incorporated.ENJOY!

If its too thick, add a small amount of milk to thin it out.

I got this recipe online from Cake Central and its my absolute favorite icing!I think it goes well with any cake especially red velvet and strawberry! But I also love it with white or chocolate cake!If you like cream cheese you'll love this icing! Its also very easy to work with, it crusts really well so its great on decorating cakes!and it makes great swirls on top of cupcakes!
Royal Icing

3 cups powdered sugar
1/4 tsp. cream of tartar
2 egg whiten, beaten

Directions: In a bowl, sift together powder sugar and cream of tarter. Using the electric mixer, beat in 2 beaten egg whites for about 5 minutes or until its thick enough to hold it's shape.

**We use this every year for gingerbread houses. It acts like a "glue" to stick the graham crackers together.**

Mom's New Favorite Brownies

2 oz (squares) unsweetened chocolate
1/3 cup (5 1/2 Tbsp) butter
3/4 cup sugar
1 egg
pinch of salt
1/2 cup flour
3/4 cup walnuts chopped
1 tsp. vanilla

Butter 8 inch square pan. Melt chocolate and butter in saucepan. Stir in rest of ingredients in order given. Spread in pan. Bake at 325 for 30 minutes. Cool completely for chewiest results. (Watch closely, don't let it get brown around the edges).
Makes 12.
Moms Favorite Brownies

4 eggs
*Beat*
2 cups sugar
*Gradually add*
1 cup melted butter
2 tsp. vanilla
*Blend in*
1 1/3 cup flour
2/3 cup cocoa
1 tsp. baking powder
1/2 tsp. salt
*Combine ingredients and add to egg mixture. Blend thoroughly.*
Put in greased pan. Bake at350 for 25-30 minutes.
Wilton Decorating Frosting

1 tsp. vanilla extract
1 tsp. almond extract {OR 2 tsp. vanilla}
4 T. milk or water
2 cups shortening
2 T. Wilton Meringue Powder
2 lb. (approx 8 cups) powdered sugar

Sift powdered sugar and meringue powder into a large mixing bowl and set aside. Cream shortening, flavorings and milk or water. Gradually add sifted dry ingredients and mix on medium speed until all ingredients have been thoroughly mixed together. Blend an additional minute or so, until creamy. Don't over mix, or you'll have too many air bubbles.

This recipe makes a STIFF frosting: use it for making flowers or upright designs. To create a MEDIUM consistency, add 2 T. more of liquid to the original recipe. Use this for borders and flowers with petals that lie flat. To creat a THIN consistency, add 4 T. more of liquid to the original recipe. Use thin consistency for writing, making stems, leaves and frosting a cake.
Salsa

5 lbs. tomatoes
1 lb. onion
2 lb. hot chili peppers or 1 tsp. dried
2 Tbsp. salt
1/2 tsp pepper
1/3 cup vinegar
3 cloves garlic
1 tsp. oregano
1 Tbsp. chili powder

Simmer 30 minutes and process for 10 minutes.
Chicken Cashew Pasta Salad

12 oz. small salad macaroni -- cooked
3 chicken breasts cooked and cubed
2 cups red grapes
2/3 cups green onions
2 cups dices apples (fuji)
1 cup mayo
1/2 cup coleslaw dressing
1/4 cup milk
1 cup cashews
salt and pepper

Combine everything except cashews. Chill. Add cashews right before serving.
Potato Casserole

1 pkg. hash browns (or 6-7 medium potatoes cooked and grated)
1 can cream of chicken soup
1/2 cup butter or margarine
1 1/2 cup grated cheese
1 pt. sour cream
1/2 chopped onion
1 tsp. salt
1/4 tsp. pepper

Put potatoes in 9x13 pan. Combine soup and butter until melted. Add rest of ingredients. Pour over potatoes in baking dish.
Bake at 350 for 45 to 60 minutes (until bubbly and brown).

**We have this every year at Christmas Eve Dinner**
Bean Soup

1 lb. hamburger
1 lb. bacon-cut in big pieces
1 cup chopped onion
**Cook together**
2 (2 oz) cans pork and beans
1 (16 oz) kidney beans-drained
1 (16 oz) butter beans
1 cup ketchup
1/4 cup brown sugar
3 Tbsp. white vinegar
1 tsp. salt

Crockpot: Low 4-6 hours
Baking dish: 1 1/2 hours

For the twins baby blessing we made three or four different soups served with rolls. We put it in the crockpot before church and served after. It worked out perfectly!
Easy Caramel Popcorn

10 big marshallows
1/2 cup butter
1/2 cup brown sugar
8 cups of popped popcorn.

Cook all of the ingredients in the microwave and then pour over the popcorn.
(We usually double the caramel recipe for the 8 cups of popcorn).

The Greatest Fudge

In a glass bowl add:
3 (6 oz) milk chocolate chips
2 cups mini marshmallows
1 can Bordon's sweetened condensed milk
Dash of salt
**3 minutes in microwave on high**

Stir in with a wooden spoon:
1 1/2 cups chopped nuts
2 tsp. vanilla

Put in buttered 9x13 pan-set overnight.
Chicken and 3 Lettuce Salad

In a large bowl combine:
Romaine lettuce
Chopped cabbage
Spinach leaves
Chicken pieces
Craisins
Peanuts
Chopped green onions.

Use amount depending on how much you want to make.
For dressing use Brianna's Poppy seed dressing.
Toss and enjoy.
Bacon Wrap Chicken

Spray pan.
Wrap 1 piece of bacon around 1 piece of chicken.
Set in pan. {repeat}.

Sauce:
2 cans cream of mushroom
2 cans cream of chicken
2 cups sour cream
**Pour on top of chicken**

Bake at 300 for 3 1/2 hours.
Take out chicken and use sauce for mashed potatoes.
Makes 8 servings.
Not Dutch Oven Chicken

4 chicken breasts
1 Tbsp. oil
1 clove of garlic minced
**Brown chicken in oil and garlic**

4-6 slices of bacon cut in pieces
1 onion
salt and pepper
3-4 potatoes peeled and diced
3-4 carrots sliced
1 can cream of chicken soup
1/4 cup sour cream
1/2 cup milk

Place browned chicken in 9x13 pan. Arrange veggies around chicken. Sprinkle with bacon, salt/pepper. Mix soup, sour cream and milk. Pour over top. Cover with foil.
Bake at 350 for 60-90 minutes until veggies are tender.
Cafe Rio Pulled Pork

2 1/2 pounds pork
1/3 cup water
1/8 tsp. garlic salt
1/8 tsp. salt
1/8 tsp. pepper
**Put in crockpot. Bake for 4 hours on low or 8 hours on high. Drain. Pull pork, then add:

1/2 cup brown sugar.
Parmesan Chicken

2 cups crushed Ritz crackers
3 Tbsp. grated Parmesan cheese
2 tsp. garlic salt
8 boneless skinless chicken breast
1 cup plain yogurt
1/4 cup melted butter

Mix crackers, cheese, garlic salt. Dip chicken in yogurt, then into crumbs. Put in greased 9x13 dish. Drizzle with melted butter. Bake at 350 for 45 minutes.

Sauce
2 cans cream of chicken
1 cup sour cream

Heat up. Put over rice or mashed potatoes.
Zucchini Bread

3 eggs
1 cup oil
2 1/2 cups sugar
3 tsp. vanilla

2 cups finely chopped zucchini
3 cups flour

Cookie Dough Brownies

1 (21.5 oz) Fudge Brownie Mix
1/2 cup water
1/2 cup oil
1 egg
1/2 cup semi sweet chocolate chips

Grease 9x13 pan. Combine brownie mix, water, oil, egg. Beat 50 strokes by hand. Stir in chocolate chips. Spread in greased pan. Bake at 350 for 30-35 minutes. Cool completely.

1/2 cup margarine (softened)
1/2 cup brown sugar
1/4 cup sugar
2 Tbsp. milk

Let rise for one hour.

Banana Creame Pie

8 cups milk
2 cups sugar
1 1/3 cup corn starch
1 tsp. salt
4 large eggs

1. Heat milk (all but 1/2 cup) in double boilet (scald)
2. Mix sugar, eggs, cornstarch, salt, 1/2 cup milk from double boiler.
Add to hot milk.
3. Bring to a boil.
4. Cook until thick (like gravy).
5. Remove from heat

Add:
2/3 cup margarine
4 tsp. vanilla
Cool with saran wrap on top for 4-5 hours.
Then beat with electric mixer. (It will be very thick but creamy/fluffy once you mix it)

Makes 4 large or 5 small pies.
Good for one week.
Once mixed, you don't have to mix again.
Caramel Corn

2 cubes butter (melt)

Pizza or Breadstick Dough

Small batch:
1 3/4 cup hot water
1 1/2 Tbsp. yeast
1/8 cup powdered milk
1/8 cup oil
1 tsp. salt
4 cups flour

Large Batch:
3 1/2 cups hot water
3 Tbsp. yeast
1/4 cup powdered milk
1/4 cup oil
2 tsp. salt
7-9 cups flour

Start with water, oil and salt. Mix together yeast, powdered milk and some flour. Add to water mixture. If using a mixer add more flour and make sticky dough and mix 2 minutes. Add remaining flour to desired texture.

For a cheesy pizza: Bake at 350 for 2 minutes. Add toppings and bake until bottom of crust is brown.
For breadsticks: Cut in strips and let rise a little then bake at 350 until light brown. Dip in pizza sauce or garlic butter.
Chocolate Frosting

3 cups powdered sugar
3/4 cup cocoa

6 Tbsp. milk

1 1/2 cups flour
1/2 tsp. salt
1/3 cup shortening

Preheat oven to 350. In a bowl combine flour, baking powder, salt and 1/2 tsp nutmeg. In another bowl beat shortening, 1/2 cup sugar, egg and vanilla until well blended. Add flour mixture to the creamed mixture and beat in milk until smooth. Fill each cup of a lightly greased 12 cup muffin tin 2/3 full with batter. Bake 20 minutes, or until bown.

Melt butter in a saucepan.

In a small bowl combine 1/2 cup sugar, cinnamon, and 1/2 tsp. nutmeg. While puffins are warm, dip each one in butter then in sugar mixture, coating thoroughly. Make 1 dozen puffins.

3.4 oz pkg. instant pistachio pudding mix

1 cup lemon lime soda

Combine first 5 ingredients in a large mixing bowl; beat until well blended. Pour into a greased and floured 13x9 baking dish; bake at 350 degrees for 45 minutes. Cool and frost. Top with coconut and pecans. Serves 10-12.

Icing

3.4 oz instant pistachio pudding mix

Chocolate Pretzel Rings

48-50 pretzel rings or mini twists
1 pkg. chocolate kisses (8oz)
1/4 cup m&m's plain or peanut

Place pretzels on baking sheets, place a kiss in center of pretzel. Bake at 275 degrees for 2-3 minutes until kiss is softened. Remove from oven. Place an m&m on each until chocolate fills the ring. May refrigerate 5-10 minutes. Store at room temperature. Makes 4 dozen.

Double Delicious Cookie Bars

1/2 cup margarine or butter
1 1/2 cup graham cracker crumbs
1-14oz. sweetened condensed milk
1 cup semi sweet chocolate chips
1 cup peanut butter chips

1. Preheat oven to 350. 9x13 pan. Melt butter
2. Sprinkle crumbs evenly over butter. Pour sweetened milk evenly over crumbs. Top with chocolate chips and press down with spoon.
3. Bake 25-30 minutes until lightly browned.

Can line your pan with foil for easey clean up.
Patti's Won Ton Salad

Tuscan Flat Bread

2 cups warm water
4 cups flour

1/2 cup melted butter

Dissolve yeast and sugar in warm water. Let set for 2-3 minutes. Add flour, salt, rosemary. Spread dough to the edges of a greased lipped jellyroll. Pour melted butter on dough and spread. Let rise 30 minutes. Bake 20 minutes at 400 degrees. Serve warm.

**Instead of using rosemary you can use parmesan cheese**
Snickerdoodles

Lemon Bars

Put crust together like pie crust. Press in 9x13 pan. Bake 20 minutes at 350. Meanwhile combine eggs, sugar, baking powder, flour and juice. Pour onto cooked crust. Return to oven and bake 25 minutes more. Top with powdered sugar.
Original Oatmeal Cookies

3/4 cup shortening
1 cup brown sugar
1/2 cup sugar
1 egg
1/4 cup water
1 tsp. vanilla
**Beat until creamy**

Tori's Pumpkin Cookies

1/4 cup shortening

1 egg
1/2 cup canned pumpkin
1 cup flour
2 tsp. baking powder

1 Tbsp. cinnamon

1 cup chocolate chips

Cream shortening and sugar until light and fluffy. Add beaten egg and pumpkin. Mix well. Add flour and spices. Stir in chocoate chips. Frost with cream cheese frosting.

Coffee Cake

Breakfast Quiche

16 oz. frozen cubed hashbrown potatoes
1/2 cup butter melted
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
1 cup cubed ham
1/2 cup evaporated milk
3 eggs, beaten slightly
1/4 tsp. salt

Arrange the hashbrown potatoes in a pie plate to form a crust. Then pour the butter over the potatoes and bake for 25 minutes at 350 degrees. Now layer the cheeses and ham over the potatoes. Next beat eggs slightly and add milk and salt. Pour this egg mixture over the other ingredients. Now bake this 30-40 minutes.
The Ultimate Chocolate Frosting

In a small bowl with mixer at medium speed beat 6 Tbsp. margarine. Add 3/4 cup Hershey cocoa and 3 1/2 cups powdered sugar alternately with 6-7 Tbsp of milk. Beat until spreading consistency addi additionngal milk if needed. Add 1 tsp. vanilla. Makes 2 3/4 cups.
Unbaked Peanut Butter Oatmeal Cookies

2 cups sugar
2 Tbsp. cocoa

Chocolate Popcorn

1 package low fat microwave popcorn
2 cups mini marshmallows
3/4 cup almonds (roaste and chopped) or cashews or pecans
8 oz. white chocolate
2 oz. dark chocolate

Pop popcorn. Remove kernals.
Place in bowl. Add melted (white) chocolate, marshmallows, nuts.
Place on waxed paper lined cookie sheets. Drizzle with melted dark chocolate.
When chocolate is set up break up in pieces.
Mexican Rice and Beans

16 oz. mexican style beans (red)
16 oz. crushed tomatoes undrained
1 1/2 cups uncooked rice
1 large onion finely chopped
1-16 oz. black beans drained
4 1/2 oz. chopped green chili's undrained
2 cloves garlic minced
1 1/2 cup grated cheese divided

Add all ingredients to a crockpot. Add 3/4 cup of cheese at first then put the rest in one hour before cooking is completed.

Low 6-7 hours
Omelets in a Bag

Have each person write their name on a quart-size freezer bag with permanent marker.
Crack 2 large or extra large eggs into the bag (no more than 2). Shake to combine. Put out a variety of ingredients such as cheeses, ham, olives, onion, green pepper, tomato, hash browns, salsa, etc. Release air out of bag, shake and zip. Place bags into rolling boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot.

Open bags and the omelet will roll out easily. Be prepared for everyone to be amazed.
Lasagna
{mom}

1/2 lb. Italian sausage
1/2 lb. ground chuck
{OR you can use 1 lb. hamburger}

1 clove garlic {minced}
1 Tbsp. basil
1 1/2 tsp. salt
1-1 lb. can tomatoes
2-6 oz. cans tomato paste
{OR favorite spaghetti sauce}
10 oz lasagna noodles

3 cups cottage cheese
1/2 cup parmesan cheese
2 Tbsp. parsley flakes
2 beaten eggs
1 tsp. salt
1/2 tsp. pepper
1 lb. motzorella cheese-sliced very thin.

Brown meat slow. Add next 5 ingredients. Simmer uncovered 30 minutes. Cook noodles in boiling salt water until tender. Drain. Combine rest of ingredients except cheese in a bowl. Place half of noodles in dish then cottage cheese mixture, half the cheese and half meat sauce. Repeat.
Bake at 375 for 30 minutes
Let stand 10 minutes before cutting.
Serves 12.
Cooking Chicken Breasts

Bring a pot of water to boil. Add your chicken bring back to boil. Put a lid on pan turn off stove for 20-25 mintues. Perfect!
Nicea's Favorite Fried Rice
{mom}

1-2 chicken breasts cut in small pieces
Marinate in soy sauce
3 scrambled eggs
2 carrots finely grated
1/2 white onion finely chopped
3/4 cup frozen peas
1/2 cup butter
1-2 cloves garlic or 1 tsp. garlic powder
2 cups white rice (not instant)

Cook chicken in a small amount of olive oil. Add carrots and onions and saute until clear. Add frozen peas-cook until soft. In seperate pan make and add rice to the mixture. Scramble eggs-chop finely-add to rice and vegetables/chicken mixture. Melt 1/2 cup butter add crushed garlic to butter and stir. Add to mixture.
Spaghetti Salad

1 lb. spaghetti
1 medium green pepper
1 pkg. cherry tomatoes
1 medium red onion
1 cucumber
2 Tbsp Salad Supreme
2 Tbsp. Parmesan cheese
1 bottle Italian salad dressing (8 oz)

Cook spaghetti according to directions on box. Rinse and cool. Toss spaghetti and all other ingredients.
Super Crisp Country Fried Chicken
{mom}

1 frying chicken cut up
1/2 cup milk
1 egg
1 cup flour
2 tsp. garlic salt
1 tsp. paprika
1/4 tsp. poultry seasoning
1 tsp. pepper

For extra spicy chicken increase poultry seasoning to 1/2 tsp. and black pepper to 2 tsp.

Blend milk and egg. Combine flour and seasonings in plastic bag. Shake chicken in flour. Dip chicken in milk/egg mixture. Shake chicken a second time in seasoning mixture to coat thoroughly. Melt crisco to about 1/2-1 inch thick deep and heat to 365. Brown chicken on all sides. Reduce heat to 275 and cook until tender 30-40 minutes {turning it over so the middle isn't pink). Do not cover. Drain on paper towel.

8 cups tomatoes
2 tsp. oregano
4 tsp. garlic
4-6oz. tomato paste

Orange Julius

1-6oz can orange juice
1 1/2 cup water
1/2 cup sugar
1/2 cup milk
1 tsp vanilla
1 tray ice cubes

Mix in blender

Add juices. Simmer an hour or so until cinnamon flavor develops. Do not boil. Serves 20-25. Stores well in pitcher in fridge, with cinnamon sticks left in. Simply microwave for heart warming holiday drink.
Cinnamon and Sugar Pretzels with White Chocolate

18 oz. bag small pretzels
2/3 cup oil
-------
2/3 cup sugar
3 tsp. cinnamon
**mix and divide in half**

White Chocolate: I use 1/2 pkg of almond bark.

In microwave safe bowl pour pretzels. Mix oil and 1/2 sugar/cinnamon mixture. Pour over pretzels and mix well. Microwave for 1 minute, stir. Repeat 2 more times (3 min total). Spread on 2 cookie sheets. Sprinkle with other half of cinnamon and sugar. Melt white chocolate and drizzle over pretzels. Let chocolate set up and store in air tight containers.
Taco Soup

Brown 1/2 lb. lean hamburger
add 1/2 onion
**cook 3-4 minutes**
Add 15 oz. red beans with sauce
1-11oz. can corn with liquid
Big can crushed tomatoes

Heat through. Top with sour cream, cheese, olives, corn chips, etc.
Favorite Chili

2 cups beans-boil 5 minutes in water. Soak an hour. Drain beans and add:

Caramel Pecan Brownies
{mom}

1 (18.5 oz) pkg. Devils food cake mix
1 cup chopped pecans
3/4 cup margarine-melted
1 (16 oz) pkg. caramels
1/3 cup evaporated milk
1 (12 oz) pkg. chocolate chips

Mix cake mix, pecans and butter in large bowl with a wooden spoon. Press 1/2 batter in a 9x13 pan glass dish. Bake at 350 for 8 minutes.
Melt caramels, stir in can milk. Pour over brownie layer. Sprinkle on chocolate chips. Put rest of brownies on top. Bake 18 more minutes.
Fiesta Vermicelli

3 coils (6 oz) coiled vermicelli
2 Tbsp. oil
1 lb. hamburger
1/2 cup chopped onion
1/4 cup green pepper chopped
1 1/2 cups water
28 oz. can tomatoes, undrained and cut up
1 tsp. salt
1 tsp. oregano
1/8-1/4 tsp. cayenne pepper

Break vermicelli coils into small pieces about 1-2 inches long. Lightly brown vermicelli. in oil over medium heat; remove from pan. In same dutch oven brown hamburger with onion and green pepper. Drain. Stir in remaining ingredients plus browned vermicelli, bring to a boil. Reduce heat and cook stirring frequently for 10-15 minutes.
Makes 4-6 servings.
Norene's Mud Balls

1 pt. whipping cream
1/2 cup crushed peppermint candy
1 lb. pkg. mini marshmallows
1/2 cup crushed nuts
1 pkg. oreos crushed

Whip cream and sweeten to taste. Add candy, marshmallows and nuts. Stand over night in refrigerator. Shape into balls-Roll in oreo crumbs.
Peanut Butter Cookie Cups

1/2 cup sugar
1/2 cup brown sugar
1/2 cup butter or margarine
1/2 cup creamy peanut butter
1 egg
1/2 tsp. vanilla
1 1/4 cups flour
3/4 tsp. baking soda
1/4 tsp. salt
1-13 oz. mini peanut butter cups unwrapped.

Turn oven to 350. Spray mini muffin pan with cooking spray.
Combine sugar, brown sugar, butter. Mix for 1-2 minutes. Add egg and vanilla-beat 1 minute.
Reduce speed to low. Add flour, baking soda and salt. Beat another 1-2 minutes. Shape dough into 1 inch balls. Place in cups. Bake until brown. Remove from oven and press peanut butter cup in center of each cookie. Let cool 30 minutes.
Makes 4 dozen.
Peanut Blossoms

1 3/4 cup flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup salted butter
1/2 cup peanut butter1 tsp vanilla
45 chocolate kisses

Mix flour, soda and salt. Beat butters, brown sugar and 1/2 regular sugar. Add egg and vanilla. Add flour slowly. Put aside 1/2 cup sugar. Roll into 1 inch balls. Roll in sugar. Bake at 350 for 10 minutes. Take out. Press kiss on top. Cook for 2-4 minutes longer.
